MARINARA SAUCE | |
1 clove garlic 1 can whole tomatoes (32 oz.) salt and pepper to taste 1/4 tsp. sugar olive oil basil (2 fresh leaves or 1/2 tsp. dried) Coat bottom of heavy saucepan lightly with olive oil and add garlic clove. Saute lightly (don't burn garlic, becomes bitter). Add tomatoes carefully to avoid spatter of hot oil. Mash with potato masher. Add salt, pepper, sugar and basil. Simmer uncovered 1/2 hour. Sugar will remove tartness from tomatoes. Good vegetarian sauce over spaghetti, noodles or rice. Also good over fresh green or wax beans. |
