BROCCOLI AND RICE CASSEROLE 
1 (16 oz.) bag of chopped broccoli
6 c. cooked rice
1/2 lb. Velveeta cheese, cubed
1 can cream of mushroom soup
1 onion, chopped

Saute chopped onion in butter. Steam broccoli. Mix all ingredients and pour into a 9x13 glass baking dish.

Bake for 30 minutes at 350°F.

Serves 8.
