COCONUT PIE FILLING 
1 c. sugar
2 heaping tbsp. flour
Pinch salt
3 egg yolks
2 1/2 c. milk
2 tbsp. butter
1 c. coconut

Mix sugar, flour, salt, egg yolks and milk. Cook together until thick. Add butter and coconut. Pour into 2 pie (already baked) shells.

MERINGUE:

Beat 3 egg whites until stiff. Add 2 tablespoons sugar. Spread over pies and bake until brown.
