COUNTRY FRENCH POTATO PIE | |
2 (9 inch) deep dish frozen pie shells 24 oz. cottage cheese 3 c. mashed potatoes (4-5 large) 2 large eggs (or 3 medium) 1 tsp. salt 1 tsp. pepper 1/4 tsp. cayenne pepper or to taste 2/3 c. sliced green onions shredded Parmesan cheese In blender or food processor, blend cottage cheese until smooth. Add mashed potatoes, eggs, salt, pepper, cayenne pepper and mix well. Gently stir in green onions (use a lot of the green part) and pour into pie shells. Top with Parmesan cheese. Bake at 425°F for 50 minutes. Check the crust after 35 minutes. You may have to cover with foil if too brown. Allow to cool slightly before slicing. Slices will not hold shape if too hot. Makes 2 pies. |
