COCONUT CAKE 
1 box yellow cake mix
2 c. sugar
1 c. water
3 egg whites, beaten
1 tsp. vanilla
Coconut, sprinkled on top & sides

Prepare cake mix as directed on package. Bake in 2 (9") layers. Let layers cool.

While cake is cooling: Cook sugar and water to make a syrup. It will be done when syrup forms a ball when dropped in cold water. Pour in egg whites that have been beaten to form a peak. Beat while pouring in egg whites. Add vanilla.

Put icing between layers and sprinkle with coconut. Spread the remaining icing on top and sides of cake. As much as you like. sure is good. To make it better grate a fresh coconut and use instead of store coconut.
