ONION CASSEROLE 
4-5 med. to lg. Vidalia onions
1 stick butter
24 Ritz crackers, crushed
Parmesan cheese

Slice onions. Saute in butter until glassy (not mushy). Put half the onions in casserole dish using spoon with holes. Layer with half the cracker crumbs, then Parmesan cheese. Repeat using the other half of the onions, cracker crumbs and Parmesan cheese. Bake at 325 degrees for 30 minutes.
