BARBARA'S ONION CASSEROLE 
6 lg. Vidalia onions, chopped
1/2 c. butter
3 c. cooked long grain rice
2 tbsp. fresh parsley, minced
1/4 tsp. salt
1/4 tsp. pepper
1 c. shredded Swiss cheese
1 c. whipping cream
Paprika

Saute chopped onions in butter and cook about 15 minutes, stirring frequently. Remove from heat and stir in rice, parsley, salt, pepper, cheese and cream. Spoon mixture into a 9 x 13 inch baking dish. Cover and bake at 350 degrees for 30 minutes. Sprinkle lightly with paprika and 1/3 cup slivered almonds.
