BRAN MUFFINS 
2 c. whole wheat flour
1 1/2 c. unprocessed Miller's bran
1/2 tsp. salt
1 1/4 tsp. baking soda
2 c. buttermilk
1 egg white
1/4 c. dark molasses
1 tbsp. honey
2 tbsp. oil

VARIATION: Instead of 2 cups whole wheat flour and 1 1/2 cups bran, use 1 cup whole wheat flour, 1 cup wheat bran, 1 cup oat bran, 1/4 cup wheat germ, 1/4 cup cracked wheat or bulgur wheat.

Combine flour, bran, salt and soda; mix well. Combine remaining ingredients and stir into dry ingredients, just enough to moisten. Spoon into well-greased muffin tins, filling them 3/4 full. Bake at 350 degrees for 20 to 25 minutes. Makes 18 muffins.

Can be put in cupcake liners that have been sprayed with non-stick cooking spray. Serves 18.
