Flour tortilla 3/4 lb. lean ground beef 1 tbsp. salad oil 1 lg. onion, chopped 1 lg. green pepper, chopped 1 clove garlic, minced or mashed 1/2 tsp. salt 1/2 tsp. ground cumin 1/8 tsp. cayenne 2 tbsp. chili powder 1/2 c. refried beans 1 c. or about 4 oz. Jack cheese, shredded Heat salad oil in large frying pan. Add ground beef, stir. Cook until light brown. Add onion, pepper and garlic. Cook, stirring until onion is transparent. Stir in salt, cumin, chili powder, cayenne and refried beans. Cook, stirring constantly, over medium heat until hot. Fold in cheese and set aside to cool. Place about 1/2 cup of the above mixture near center of flour tortilla. Fold tortilla around filling, tucking in sides. Fasten with wooden toothpicks. If tortilla is too brittle to roll, lightly dampen with water, wrap in foil and heat in 350 degree oven until warm and pliable. |
