12 eggs 2 lbs. brown sugar 1 tbsp. vanilla 4 c. white sugar 1 tbsp. Karo syrup 8 tsp. baking soda 1 lb. butter 18 c. (1 lg. box) oatmeal 3 lbs. peanut butter 1 lb. chocolate chips 1 lb. plain M&M'S® 1 (6 oz.) bag butterscotch chips 1 c. chopped nuts In a very large bowl cream the butter and sugars. Add the eggs, vanilla and Karo syrup. Mix well. Add the peanut butter (we prefer the chunky type) and baking soda. Stir. Next stir in the oatmeal. It gets really thick so mix it by hand. Add the rest of the ingredients. Mix well. Drop by tablespoon onto greased cookie sheet. Bake at 350 degrees for 8-10 minutes for a soft cookie or 10-12 minutes for a crunchy cookie. It makes 19 dozen cookies. They keep well. I have filled gallon size ziplock bags with the dough and frozen it for later use. Simply thaw and bake when you want fresh cookies. |
