CAULIFLOWER AU GRATIN 
1 lg. cauliflower
1 stick butter
1/2 c. grated Swiss cheese
1/2 c. grated Romano or Parmesan cheese

Cut cauliflower into 2 inch flowerets. Blanch in 7 to 8 quarts boiling salted water for 9 to 12 minutes, refresh in cold water. Place cauliflower in a buttered baking dish. Pour 1/2 stick melted butter over cauliflower. Top with 1/2 cup grated Swiss cheese, 1/2 cup grated Romano or Parmesan cheese. Pour rest of melted butter on top of cheese and sprinkle with bread crumbs. bake at 375 degrees for 30 minutes. Before serving broil for a few minutes until bread crumbs brown.
