CAULIFLOWER AU GRATIN 
1 lg. cauliflower
8 oz. Velveeta cheese
2 to 3 tbsp. butter
3 tbsp. flour
Salt & pepper to taste
Milk

Wash thoroughly and separate flowers. Boil gently in salted water until tender. Drain. Heat butter. Meanwhile, prepare flour, salt and pepper and mix with some of the milk until smooth. Place in pan with butter (may be done in a double boiler), watch constantly so that mixture becomes smooth and slightly thick. At the same time, add small chunks or pieces of Velveeta cheese. Make sure all is smooth and place drained cauliflower in casserole. Cover with cheese mixture and bake for about 1 hour in 350 degree oven.
