CHOW-CHOW RELISH 
2 c. chopped cabbage
3 c. chopped cauliflower
2 c. chopped onion
2 c. chopped green tomato
2 c. chopped sweet green pepper
2 c. chopped celery
2 c. chopped cucumber
3 tbsp. salt
2 1/2 c. vinegar
1 1/2 c. sugar
1 tsp. turmeric
1/2 tsp. ground ginger
2 tsp. celery seed
1 tsp. mustard seed
other spices can be added, if desired

Combine chopped vegetables, sprinkle with salt. Let stand 4 to 6 hours in a cool place. Drain well.

Combine vinegar, sugar and spices, simmer 10 minutes. Add vegetables, simmer 10 minutes. Bring to boil. Pack into hot jars, leave 1/8 inch head space. Adjust caps. Process 10 minutes.
