PASSOVER SPINACH SOUFFLE - SIDE

10 oz. pkg. chopped spinach
1/2 lb. cream cheese (8 oz.)
1 lb. cottage cheese
1/2 c. matzo meal
3 eggs
Salt and pepper to taste

Preheat oven to 350 degrees. Grease 1 quart souffle dish or casserole dish. Cook spinach completely. Melt cream cheese over boiling water. Add to hot spinach. Add cottage cheese and matzo meal and mix well. Stir in the eggs. (Beat eggs before) Add salt and pepper. Pour into dish. Bake 40 minutes.
