BAKLAVA - GREEK VERSION 
1 box phyllo pastry - 1 lb. defrosted
1 1/2 c. (3/4 lb.) unsalted butter, melted
1 1/2 c. finely cut walnuts
1/3 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg

SYRUP:

3 c. water
3 c. sugar
1 tsp. lemon juice
Cinnamon stick
2 tbsp. honey

Peel off 10 sheets phyllo and place in buttered 13 x 9 x 2 inch pan brushing with butter after each second sheet. Spread with a mixture of walnuts, sugar, cinnamon and nutmeg (1/3 of mixture).

5 phyllo sheets, buttered

1/3 nut mixture

6 phyllo sheets, buttered

1/3 nut mixture

Top with phyllo sheets.

Cut into diamond shapes. Heat remaining butter - pour it on. Bake at 350 degrees for 30 minutes, 300 degrees for 1 hour. Remove from oven, pour on hot syrup.

Syrup: Simmer all ingredients except honey. Take out cinnamon stick and add honey last. Cool. Serve. Enjoy!
