BAKED CHOP SUEY 
2 lbs. pork and veal, diced
1/2 c. rice
1 c. boiling water
1 tsp. salt
2 tbsp. fat
1 1/2 c. chopped celery
1/2 c. onion
1/2 c. green peppers
1/4 c. pimientos
1 can mushroom soup
1 can mushrooms
2 tbsp. soy sauce

Soak rice, water and salt in a 2 quart casserole and let stand. Brown meat, place over rice, add soup and rest of ingredients. Cover and bake 1 1/2 hours at 350 degrees.
