BLACK BEAN SOUP 
12 oz. dry black beans
8 c. water
1 lg. onion, chopped
2 green peppers, chopped
2 garlic cloves, minced
1/2 c. olive oil
1 ham hock
2 bay leaves
1 tbsp. salt
1 oz. bacon (salt free)
1/2 c. vinegar
Rice, cooked
Onion, chopped

Wash beans thoroughly and soak in warm water overnight. Fry green peppers, onions, and garlic in olive oil. Add bean mixture. Add next four ingredients. Bring to boil. Skim off foam. Reduce heat. Cover and cook slowly for 2-3 hours. Add vinegar and cook for 2 minutes. Serve with cooked rice. Top with chopped onions.
