GRANDPA'S BEAN SOUP 
6 c. water
1 c. dry beans, assorted (navy, red, pinto, etc.)
1/2 c. dry brown rice
1 onion, diced
2-3 carrots, diced
1/2 green pepper, diced
1 (6 oz.) can V-8 (hot) or snappy tomato juice
2-3 dashes Tabasco sauce
2-3 stalks celery, diced
Black pepper to taste
1 c. diced ham

Combine all ingredients in a large pot. Simmer for at least 3 hours or more. Makes 3 quarts.
