CHICKEN FRICASSE WITH NEVER FAIL
DUMPLINGS
 
1 chicken
1/4 c. oil
2 sprigs parsley
3 or 4 celery stalks (tops)
1 or more carrots
1 sliced onion
2 tsp. salt
1/4 tsp. pepper
3/4 c. milk
1 1/2 c. self-rising flour (dumpling mix)

Clean and cut up chicken; brown slowly in 1/4 cup oil. Place in kettle with just enough boiling water to cover. Add rest of ingredients, except milk and flour. Boil 5 minutes. Turn down heat; simmer gently until tender (2 to 3 hours). Add water, if necessary. Drop dumplings by spoonfuls onto boiling chicken. Cook 10 minutes, uncovered, and 10 minutes, covered.
