BAKED POTATO SALAD | |
6 medium potatoes, peeled and sliced 1/2 cup bread crumbs 1 cup sour cream 1 cup mayonnaise 2 tbsp. all-purpose flour 2 tbsp. scallions, minced salt, to taste 6 hard-boiled eggs, sliced 1/4 cup melted butter 1/2 lb. bacon, cooked and crumbled Cook potatoes in a small amount of water until just tender. Drain. Sprinkle 1 tablespoon of bread crumbs in a buttered 2-quart casserole dish. Combine sour cream, mayonnaise, flour and scallions. Place layer of potatoes in dish. Sprinkle with salt. Add a layer of eggs. Add some of the sour cream mixture. Repeat the layers. Sprinkle the remaining bread crumbs on top. Drizzle melted butter over crumbs. Bake in a pre-heated 350°F oven for 30 minutes. Sprinkle bacon crumbs on top before serving. Serves 6. Submitted by: Dody Pierce |
