BROCCOLI CASSEROLE 
1/4 c. finely chopped onions
6 tbsp. butter
2 tbsp. flour
1/2 c. water
1 (8 oz.) jar Cheez Whiz
1/2 tsp. salt
2 (10 oz.) pkg. frozen broccoli, thawed and drained
3 eggs, well beaten
1/2 c. soda crackers or Ritz crumbs

Saute onions in 4 tablespoons butter until soft. Stir in flour; add water. Cook over low flame until mixture thickens and comes to a boil. Turn off heat. Blend in cheese. Combine the sauce and broccoli. Add eggs gently until blended. Cover with crumbs and dot with remaining butter. Bake at 325 degrees for 30-45 minutes, until inserted knife pulls out clean. Serves 8-10.
