OLD FASHIONED MOLASSES COOKIES
8 c. plain flour
1/4 tsp. salt
1 tsp. cinnamon
1 c. melted lard or 1/2 c. melted butter
Dash of white sugar
4 tsp. baking soda
1 tbsp. ginger
3 c. molasses
10 tbsp. boiling water

Sift, then measure the flour. Add baking soda, salt and spices to flour, then sift again 3 more times. Combine the molasses, butter and boiling water. Add 4 cups of the flour mixture to the molasses mixture; mix well. Add remaining 4 cups of flour mixture, beating well after each addition.

Let dough stand in cool place for one hour. Turn onto lightly floured board. Roll dough to 1/4-inch thickness and cut with a large cookie cutter. Sprinkle each cookie with white sugar and bake in a 325 degree oven for 15 minutes.
