ITALIAN ZUCCHINI CASSEROLE | |
1 to 2 sm. tender zucchini, sliced thin 1 lb. ground beef 1/2 c. onion, diced 1 (15 1/2 oz.) jar pizza sauce or spaghetti sauce 12 oz. pkg. shredded Mozzarella cheese Brown meat in a skillet. Drain off any grease. Add onion and sauce; simmer for 30 minutes. In a 1 1/2 to 2 quart casserole dish, put a layer of meat sauce, layer of zucchini slices over sauce (3 to 4 slices deep). Sprinkle cheese over zucchini. Continue to layer ending with sauce. Sprinkle Mozzarella on top. Bake at 350 degrees for 45 minutes to 1 hour. |
