ITALIAN ZUCCHINI CASSEROLE 
2-2 1/2 lbs. zucchini
4 tbsp. oil
1/2 c. chopped onions
1/2 c. chopped green pepper
4 oz. can mushrooms
6 oz. can tomato paste
1 c. water
4 oz. Mozzarella cheese, shredded
1 pkg. spaghetti sauce mix
Parmesan cheese

Slice zucchini into 1/2-inch pieces. Place in boiling water. Boil 4-5 minutes. Drain and place in baking dish. Saute onions, green peppers in oil. Add spaghetti sauce and cheeses, mushrooms, tomato paste and water; mix well and pour over zucchini. Sprinkle top with Parmesan cheese. Bake at 350 degrees for 25-30 minutes.
