POPPYSEED CHICKEN 
4 or 5 chicken breasts
1 can cream of chicken soup
2 tbsp. butter
1 c. Ritz Bits crackers (low salt)
1 (8 oz.) container non-fat sour cream
Poppyseeds

Boil chicken breasts and debone. Tear chicken into small strips and place in 9x13 inch rectangular baking dish. Mix sour cream and cream of chicken soup. Pour over and stir into chicken.

Melt butter and stir in 1 cup crushed crackers. Spread crackers over chicken. Sprinkle with poppyseeds. Bake at 350 degrees for approximately 30 minutes or until brown and bubbly. Serves 6-8.
