MOM'S STUFFED POTATOES 
6 med. potatoes
1 lb. bulk sausage
1 med. onion
1/4 tsp. salt
Pepper to taste

Scrub potatoes well. Bake in hot oven until done. Cool enough to handle, DO NOT peel. Split in half. Scoop inside of potato out, leaving shell. Put into bowl. Mash potatoes. Crumble sausage into skillet. Chop onion, add to sausage. Cook until onion is tender.

Mix all together in bowl with potatoes, salt and pepper to taste. Heap into potato shells. Bake at 375 degrees until golden brown.
