PECAN BRITTLE 
Butter for pan
1 c. sugar
1 c. light corn syrup
2 c. pecans
1 tbsp. baking soda
1 candy thermometer

Mix sugar and syrup together put in medium saucepan; bring to boil over medium heat, stirring all the time. Check temperature on candy thermometer 280 degrees. Then stir in nuts, keep stirring then add baking soda. Baking soda will make it foam up but stir quickly and pour in cookie sheet and let it cool slightly. Makes 1 1/2 pounds.
