RICE PUDDING 
1/2 c. rice, uncooked
4 c. whole milk
1/2 tsp. salt
2 eggs
2/3 c. sugar
1/4 tsp. nutmeg
Vanilla to taste

Cook rice in milk, with salt, in a double boiler until rice is very tender and has absorbed most of the milk. Mix eggs, sugar, nutmeg, and vanilla. Add a little of the hot mixture to egg mixture (to avoid curdling) and then combine all in double boiler, cooking only until thick. Sprinkle with cinnamon. Serves 6. Can be chilled but is vest served warm.
