CHEESE DREAMS 
This is a lunch or light supper dish serving 4.

8 slices bread
3 eggs
1 lb. Mozzarella cheese
Vegetable oil to cover bottom of fry pan

Beat eggs (add a little milk or water if desired). Dip bread slices into egg and lay 4 of them out on a platter or wax paper. Slice cheese about 1/4-inch thick and palace on bread. Cover with the other slices of dipped bread to make sandwiches.

Heat fry pan, then add oil. Then place sandwiches in pan. When the bottom of sandwiches are browned (like French toast), use a wide spatula and fork to turn the sandwich over and cook until the other side is browned. Remove and serve. The Mozzarella will be soft and stringy like on pizza. One sandwich is a nice lunch. Add soup and salad for supper.

Optional: A slice of boiled ham can be added. To make cheese dream canapes, cut sandwiches into 4 pieces.
