CHILI CON CARNE 
2 lbs. stew beef, cut into 3/4" cubes
1/4 c. cooking oil
1 c. minced onion
2 mashed garlic cloves
2 tbsp. chili powder
1 tbsp. paprika
2 tsp. oregano
1 tsp. ground cumin
1 tsp. salt
1/4 tsp. pepper
1 c. (approx.) water or 2 1/2 c. canned tomatoes, undrained

Brown beef in oil on all sides. Add onion and garlic and cook 5 minutes, stirring constantly. Stir in seasonings and water or tomatoes. Simmer until meat is tender, from 3 hours to all day (improves with length of cooking time). Stir and add water from time to time to keep liquid at original level. Serve with rice or kidney beans. Serves 8.
