BROWN SUGAR MUFFINS 
1/2 c. unsalted butter, room temperature
1 c. dark brown sugar, packed
1 lg. egg, room temperature
2 c. flour (reserve 1 tbsp. for nuts)
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 c. milk
2 tsp. vanilla
1/4 c. finely chopped pecans or walnuts

In large mixing bowl, combine butter, brown sugar, and egg. Beat at high speed until light and fluffy. Sift together flour, baking soda, baking powder, and salt. With mixer on low speed, add flour mixture in fourths alternating with milk, beginning and ending with flour. Beat until smooth. Add vanilla. Fold in nuts sprinkled with 1 tablespoon flour. Fill greased muffin tins. Bake at 400 degrees for 15 minutes.
