CALIFORNIA SALAD | |
1 head cauliflower 1 bunch broccoli (about three stalks) 2 carrots, thinly sliced 2 stalks celery, diced 1 cucumber, diced 4 green onions, thinly sliced, tops and all 1 sm. green pepper, chopped 2 med. tomatoes, chopped DRESSING: 1/3 c. sugar 1/3 c. vinegar 1/3 c. mayonnaise Break cauliflower into small flowerets. Cut off broccoli flowerets and add to cauliflower along with one or two inches of each broccoli stalk diced finely. Add carrots, celery, cucumber, green onions, and pepper. Refrigerate until serving time. Mix sugar, vinegar and mayonnaise and stir until smooth. Just before serving add tomatoes and toss with dressing mixture. |
