15 1/4 oz. can chunk pineapple in juice
2 (3 oz.) pkg. Jello lime flavor gelatin
1 1/2 c. boiling water
1 c. ginger ale or cold water
1/4 tsp. ginger

Drain pineapple, reserving juice. Dissolve gelatin in boiling water. Add reserved juice, ginger ale (or cold water) and ginger. Chill until thickened. Fold in pineapple and spoon into 5 or 6 cup mold. Chill until firm, about 4 hours. Unmold, garnish with salad greens. Serves 10.
