BLUEBERRY MUFFINS 
1/2 c. rolled oats
1/2 c. orange juice
1 1/2 c. flour
1/2 c. sugar
1 1/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. oil
1 egg
1 c. blueberries

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

Line muffin pan with paper cups. (Place oven rack in middle of oven.)

In large bowl combine orange juice and oats, stir well. Lightly spoon flour into measuring cup and level off. Add flour, sugar, baking powder, salt, baking soda and oil and egg to oats mixture. Stir well. Add blueberries and mix lightly. Fill 3/4 full and sprinkle with topping. Bake 18-20 minutes, 400 degrees. Makes 12.
