CHICKEN-APPLE COLESLAW 
1 c. shredded cabbage
1/2 apple, unpeeled, cored and sliced in thin wedges
2 tbsp. chopped green peppers
2 tbsp. radishes
7 oz. sliced, cooked chicken breast or shrimp
2 tbsp. creamy dill dressing
Lettuce leaves

Mix together all ingredients except lettuce. Serve on lettuce.

CREAMY DILL DRESSING:

1 (8 oz.) cake tofu
1 tsp. lemon juice
Dash of salt
1 tsp. dry mustard
2 tsp. dill weed

Blend all ingredients in blender, adding water as needed. Yield: 2 servings.
