MANDARIN CHICKEN SALAD | |
2 1/2 - 3 c. cooked chicken, cut up 1 c. celery, sliced 2 tbsp. green onions, chopped 2 tbsp. capers 1 tsp. salt 2 tbsp. lemon juice 1/2 c. mayonnaise 1 (11 oz.) can mandarin oranges, drained 1 (9 oz.) can pineapple chunks, drained 1/2 c. slivered almonds 1/2 tsp. grated lemon rind Combine chicken, celery, onion, capers and salt. Mix together lemon juice and mayonnaise. Add to mixture. Just before serving, add oranges, pineapple and almonds. Makes 6-8 servings. |
