ORANGE ROUGHY MARINARA 
2 lbs. orange roughy
1/4 c. olive oil
2 cloves minced garlic
1 tsp. parsley, minced
1 (#2) can crushed tomatoes
2 tbsp. capers
1/4 c. pitted green olives
1/2 tsp. each basil and oregano
Salt, pepper to taste

Saute onion and garlic until golden, in the oil. Add tomatoes, parsley, salt, pepper, capers, and olives. Simmer about 15 minutes. Cut fish into serving size. Arrange fish in baking pan. Pour tomato mixture over fish. Bake in 325 degree oven until cooked, 15-20 minutes. Don't overcook; check after 10 minutes when fish flakes, it's cooked. This can also be made in a skillet on top of the stove. Serves 6 to 8.
