LAMB CHOPS | |
6 lamb chops Flour Salt and pepper 1/4 c. butter 1 clove garlic, minced 1 lg. carrot, finely minced Grated rind of 1/2 lemon Grated rind of 1/2 orange 1/4 c. parsley, chopped 1 c. dry white wine 1/2 c. rich beef broth 1 tbsp. tomato paste Dredge the chops in flour seasoned to taste with salt and pepper. Cover chops with butter and place in baker with remaining ingredients. Cover and place in oven. Bake at 350 degrees (I do mine at 350 degrees for 15 minutes and then turn down to 325 degrees for remaining time because my oven is hot--adjust accordingly) for approximately 2 hours or until chops are tender. |
