ZUCCHINI CASSEROLE 
1/4 c. butter
1 1/4 c. Ritz cracker crumbs
2 1/2 c. grated zucchini
3/4 c. shredded sharp cheese
1 sm. onion, finely chopped

Melt butter and add cracker crumbs. Mix. Save 1/4 cup for topping. In bowl mix grated zucchini, cheese and onion. Place mixture with cracker crumb mixture and mix together. Put in buttered 8" square baking pan. Sprinkle with reserved cracker mixture. Bake 1 hour in 350 degree oven.
