APPLESAUCE FRUIT CAKE 
3 c. applesauce
2 c. sugar
1 lb. nuts, chopped
1/4 lb. candied cherries
1 lb. mixed fruit chopped
4 tsp. baking soda
2 1/2 tsp. cinnamon
1 tsp. salt
1 c. shortening
1 lb. dates, chopped
1 lb. raisins
1/4 lb. candied pineapple
4 1/2 c. flour
1 tsp. nutmeg
1/2 tsp. cloves

Boil applesauce, shortening and sugar together for 5 minutes, stirring occasionally. Let stand until cool. Grease 4 one pound coffee cans, (2 loaf pans or 5 vegetable cans). Mix fruit and nuts together in a 3 quart mixing bowl. Sift flour, soda and spices together. Mix flour mixture with fruit and nuts until each piece is coated. Stir in cooled applesauce. Pour into cans and bake in oven about 2 hours. Be sure baking pans are only 1/2 full. Bake at 250 degrees for 15 minutes, 270 degrees for 15 minutes, 300 degrees for 30 minutes, 250 degrees for 20 minutes or balance of time 2 to 2 1/2 hours.
