ENCHILADA CASSEROLE 
2 lbs. ground beef
1 can tomato sauce
1 can Ro-Tel tomatoes & green chilies
1 pkg. taco seasoning mix
Salt & pepper to taste
1 dozen corn tortillas
1 can cream of chicken soup
3/4 c. milk
1 1/2 c. grated cheddar cheese
1 onion, chopped
1 clove garlic, crushed
1 tsp. chili powder

Brown meat, onion and crushed garlic. Add sauce, tomatoes and spices. Line bottom of 9"x13" dish with tortillas. Pour in meat mixture. Add another layer of tortillas. Mix cream of chicken soup and milk until smooth and pour over tortillas. Sprinkle with grated cheese. Bake in 350 degree oven for 45 minutes. Cool slightly before serving. Serves 8 to 10.
