CARROT AND PEANUT PUREE 
5 c. thinly sliced carrots
1 c. salted roasted peanuts
2 tbsp. butter
1/2 tsp. ground ginger
Salt & pepper to taste
1/2 c. sour cream

Cook carrots until tender; drain. Process peanuts and butter in a food processor fitted with a steel blade until smooth. Add the carrots and process until pureed. Add sour cream, ginger and salt & pepper to taste. Process just until blended. Serve immediately. Makes 6 portions.
