ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. grated raw zucchini
1 c. (16 oz.) can crushed pineapple, drained
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chopped walnuts (optional)
1 c. raisins (optional)

Heat oven to 350 degrees. Beat eggs and blend with other liquid ingredients. Continue beating until thick and foamy. Stir in zucchini and pineapple. Use a separate bowl and sift together flour, baking soda, salt, baking powder, cinnamon, nutmeg, walnuts and raisins. Combine the two mixtures until completely blended.

Pour into two 5 x 9 inch loaf pans which are greased and floured. Bake one hour. Makes 2 loaves.
