JEANNE'S ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 c. sugar 2 tsp. vanilla 2 c. raw zucchini, shredded 1 (8 1/2 oz.) can crushed pineapple 3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. raisins 1 c. chopped nuts Beat eggs. Add oil, sugar, vanilla. With spoon, add zucchini, pineapple; mix well. Add flour, soda, salt, baking powder, cinnamon, nutmeg, raisins and nuts. Turn into 2 greased loaf pans. Bake at 350 degrees for 50-60 minutes. |
