ZUCCHINI BREAD 
2 c. sugar
3 eggs
2 tsp. vanilla
1 c. salad oil
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
3 c. grated zucchini
1 c. nuts
1/2 c. flaked coconut

Cream sugar, eggs and vanilla; slowly add oil. Sift dry ingredients. Add to cream mixture, mixing until well blended. This will be a stiff dough until you add your zucchini. Stir zucchini in with a large mixing spoon by hand. Stir in nuts and coconut. Grease and lightly flour 2 (5"x9") loaf pans. Put half dough in each pan. Bake at 350 degrees for 1 hour and 15 minutes.
