ZUCCHINI BREAD 
2 c. sugar
3 eggs
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 tsp. vanilla
1/2 c. walnuts
1/2 c. coconut
1 c. oil
3 c. grated packed zucchini
3 c. flour, sifted

Combine ingredients. Mix well. Add flour and mix well. Pour batter into greased and floured pans. Bake 1 hour at 325 degrees or until done. Makes 2 loaves. Use 4 x 5 inch pans.
