PICKLE RELISH 
7 c. ground peeled & seeded cucumbers
3 c. ground carrots
4 lg. onions
2 red peppers
1 can pimentos
2 green peppers
2 1/2 tbsp. salt

Combine these ingredients. Sprinkle with salt. Let sit for 3 hours or overnight. Drain.

BRINE:

4 c. sugar
1 tsp. mustard seed
1 tsp. celery seed
3 c. vinegar

Pour over relish and simmer for 10 minutes. Pour in jars and seal.
