BERRY MUFFINS 
2 c. biscuit mix
Artificial sweetener equivalent to 1/4 c. sugar
1 c. unflavored yogurt
1/4 c. (1 med.) egg
1 c. berries (blueberries, raspberries, etc.)
2 tsp. grated lemon peel
Artificial sweetener equivalent to 2 tbsp. sugar

Preheat oven to 425 degrees. Grease 12 muffin cups (2 1/2 inches) and place in muffin pan. Combine mix and all but 2 tablespoons of sweetener in bowl; add yogurt. Add egg; beat with fork until well combined.

Fold berries gently into batter with rubber spatula, then place about 1/4 cup batter into each cup. Combine lemon peel and remaining sweetener and mix well. Sprinkle over batter in each cup. Bake until golden brown (20-25 minutes). Serve hot.
