RED VELVET CAKE 
3 (8") layer cake pans
2 1/2 c. all-purpose flour
2 tsp. cocoa
1 tsp. salt
1 c. buttermilk
1 tsp. vinegar
2 eggs
1 1/2 c. sugar
1 tsp. baking soda
2 c. salad oil
1 tsp. vanilla
2 oz. or 1/4 c. red food coloring

Place all dry ingredients in bowl. Blend eggs with fork. Add oil and blend. Add all dry ingredients and mix with wire whip (or electric mixer on medium speed) until smooth. Add and blend in buttermilk. Add and blend in food coloring, vinegar and vanilla. Scale evenly into three 8 inch layer cake pans. Bake at 350 degrees for 30 minutes. Cool slightly. Remove from pans. Ice with Cream Cheese Frosting. Add red hot hearts for a festive Valentine dessert.
