QUICK SHERRY CHEESECAKE | |
1 1/2 c. crushed graham crackers 2 1/2 tbsp. sugar 1 tsp. cinnamon 1/2 c. melted butter FILLING: 1 lb. cream cheese 1/2 c. sugar 3 eggs 5 tbsp. sherry 2 tsp. lemon juice 1. Mix together the crushed crackers, sugar, cinnamon and melted butter. Press on the bottom of a 9 inch springform pan. Chill until ready to use. 2. Soften the cream cheese, then beat in the sugar until the mixture is smooth. 3. Add the eggs one at a time, beating well after each addition. 4. Add the sherry and lemon juice and mix thoroughly. 5. Pour into the prepared crust and bake in a 300 degree oven for about 1 hour. Turn off the heat and leave the cheesecake in the oven with the door open until cool. 6. Top with whipped cream, sprinkle with nutmeg and serve. Serves 8. |
